I have completed Beef Enchiladas with Red Sauce

Wow these are spicy hot! We liked them very much! Next time I will make it a point to get better pics. It was dark out, I was shaky. Even daughter tried to take pics and they all turned out crappy!

spicy it must be. 8-)
And if the pictures as you say "are crappy "
it just means you'll have to " SUFFER " through
and make it again. 8-)

Shapes I will probably be talking to Don this evening and I will let him know what a huge success this Cookathon is and how much we miss Derf. Just look at how many recipes were made and still being made the number of views is fantastic 1678. Your doing a great job for a special lady

she's also a very special lady to so many people here.
And the success of this Cook-A-Thon is everybody's way of
showing our support for both her and Don. :YMHUG:

Hi I just talked to Don - Derf is the same, holding her own , but she is still in hospital and that says a lot. Don told her about the Cookathon and the huge response - 60 recipes reviewed and over 1600 views. He said it really cheered her up.
I have an idea! Would you like to send her a Thinking of you/Get well card?
