Blue Cheese Omelet by Mikekey

Being of Danish Heritage I grew up loving Blue Cheese and this omelet adds one more way for me to enjoy it. I cut the recipe back to a 2 egg one serving omelet. I loved it, it was a perfect Sunday brunch meal that I will enjoy again

Even when we were really poor (depression years) If there was any way we would have a special treat it would usually be some type of cheese, very often Blue.
In Vancouver in those years a variety of cheeses were hard to find but Woodward's Food Floor had a really great cheese selection.

Thanks Maito & Tisme. One thing I hated about blue cheese was getting it in school lunch (this was in better years). Mum would make Danish Rye bread & Blue cheese sandwiches and no-one would trade sammies with me - They wanted Peanutbutter & Jam on white bread!!!!
