Japanese Quick Pickles

We really enjoyed these pickles with our dinner the other night.
This pickle complimented the tuna cakes I made so perfectly.
Such wonderful flavours and so refreshing on a warm evening.

Lovely photos - I like all three but love #1. I can see the crunch in the pickle
