The dried flowers are the edible part, not leaves. To dry, take several stems with the flowers and tie them around the ends of the stems and hang upside down for several weeks. I used to do this every year, but now my lavender is just a garden plant, and I buy my dried blossoms at health or natural stores. Much easier
