Oh lovely pancakes Mike! I love mine dark too!

Thanks. I was fed up with the way pancakes turned out in the teflon pans, so I dug out the cast iron skillet and it worked like a charm. They all got shoved to the back of a cupboard when we got new cookware a few years ago and I had forgotten about them. Cleaned them up, re-seasoned them and now using them more often.

I LOVE cast iron pans...have 6 of them and that is basically all I use. As you know...once seasoned it is pretty much non stick. I have cooked pancakes in a dry pan...and I have no problems with sticking.. So it saves using fat or non stick spray.
