Tonight fish (tilapia) and watermelon salad and probably ice cream for dessert.

Well for this box contest I am doing; my box came yesterday late. Today ...

I asked Lady #3 is she would like to ask 3 friends and have lunch. So that is the plan.
- The box included:
pork tenderloin, fresh baby artichoke hearts, mixed mushrooms, spinach pesto, burrata, eggplant, multi grain gulten free bread, orzo, local cream, corn on the cob, asparagus, local mango BBQ sauce, watercress, provolone, bacon, herbs, citrus vinaigrette.

Lunch: marinated grilled pork tenderloin w/herbs and the vinaigrette, wrapped in bacon, brushed with the BBQ sauce, served on watercress, topped w/grilled corn sauce (pureed corn, shallots, cream, herbs).
On the side, a panzanella salad w/grilled eggplant, asparagus, artichokes, tomatoes, mushrooms; and the bread. I added some of the burrata and a bit of the spinach pesto and more olive oil to tie it all together.

Watermelon is a must time of year. I have been cutting it up and eating it daily for lunch.

Ladies #1 and #2: All Ladies: chicken, kale, and beet salad (new recipe). Delivered early; they just have to toss and dress the salad is all. Wheat rolls

Me: Pesto grilled skirt steak; 2x baked spud; brown sugar carrots

Actually much easier than it sounds. Everything is basically just grilled. But, thank you. Hopefully they will like it - they are my judges.

Was trying to think what to cook for supper. Saw some frozen shrimp in the freezer and made some Rich Shrimp Chowder. Just posted the recipe, so it'll probably be up tomorrow. My husband even went back for seconds, which he rarely does. He said I could make that all the time. Served it with some crusty, chewy Italian bread and butter.

For those in the USA ...
A very HAPPY 4TH OF JULY!

Luvin, shrimp chowder sounds delicious! I probably would of gone back for seconds too. Although stick a shrimp in anything and I'm happy :lol:

I went up to a friends place last night for a little late night fishing; also to drop off a small piece of furniture I refinished for him. We just got back home. He has some friends to see in town; so, he will be busy. They he is going me to my friends 4th party tonight.

They are making a FL style low country boil; but we also add mussels, clams, crab, and artichokes; along w/the basics (onion, potato, corn, sausage, shrimp). Of course there will be dips, fruit salad; and, probably another dessert.

Not heading to the beach where they have the fireworks display; but we will watch it on my friends big TV; our local station does a pretty good job in showing it.
