I do love catfish; when on sale ... I take advantage. If you get fresh salmon and make them yourself; they are really good. Some frozen ones can be fishy; so, can canned salmon.
Sounds like you are having a couple of good dinner. LOVE pretzel rolls; a favorite of mine.
Cheese; I do like cheese ... I go on an off. I do like it; but, more on sandwiches or pasta vs on vegetables, etc. Love to go light if possible.
Try to go a bit lighter one night, not so light the next ... Well, I try. Doesn't always work, lol.

I think I have seen a recipe on here for that.
Poured yesterday pm, luckily I was using the oven and not the grill.

Today ...
Going to a Gourmet Dinner Tasting.
2 friends, and local caterers, now retired, have these gourmet dinner tastings 1x/month. You do pay for it; but, it is invitation only. I think 25 people per party. Part of the proceeds benefit a kids shelter; the rest pays for part of the food. I've been to 3 of them; and, they are really fun.
It is definitely not things you would normally make; and, everything is small bites. But, 9 courses. Signature cocktails, cheese plate, appetizers, soup, salad, main dish, dessert cocktail, dessert, finishing coffee.
FYI, we never know what the menu is. But, you do fill out a card if you have any allergies, food dislikes, etc. Always delicious!
