Very busy cooking day ...
Lady #3: Book Club Lunch - Roasted rosemary nuts to start; beef fillet sliders w/crispy onions, arugula and a pepper mustard sauce; crab salad in endive leaves; roasted grape tomatoes; poached pears in honey

Ladies #1 and #2+4: Card/Game Night - Baked fried mushrooms w/outback dip; spinach dip w/veggies; mini chicken sloppy joes; no mayo baked potato salad; a guest is bringing dessert

Me: Grilled Asian salmon; sesame green beans and carrots; coconut rice w/scallions

Off to serve lunch in just a few; then, back to make the other ladies dinner. Just a busy day.

like always sounds wonderful. Do the rosemary nuts use fresh rosemary -- I have rosemary that is growing like weeds and this sounds good!

Yep, http://www.marthastewart.com/312589/ros ... asted-nuts; is what I base the recipe on. I do cut back on the sugar a bit; and add some red pepper flakes; and, often a bit of thyme too. But, it is a nice simple recipe; and, can be changed up lots of ways.

I like the sweet, spicy, savory taste.
Make ahead and put in a tupperware container. Lasts a good week or more; but, they are always gone before that.
------------------------------------
I cooked a party tonight for one of the ladies. I did an antipasta platter w/lemon vinaigrette, mussels and shrimp in wine w/crusty bread, cheese wonton ravioli with a mushrooms and spinach broth, ricotta cake

Me, I went to a small German restaurant and picked up take out. They put their lunch specials reduced at 3 or 4 pm, they are delicious. $8 for 2 sausages, potato cake, spaetzel, red cabbage and a drink. Actually 7.99 ... They charge 10.99 during the day; but, you get 3 sausages and dessert too.
Oh, and they always garnish with pickled eggs too. Trust me ... the lunch is more like dinner.

Looks pretty tasty Ellie. Not much here. Something easy.

I have some of my smoked chicken in the freezer; so, something with that.
I may make a hoagie with sauteed onions, peppers, mushrooms, tomatoes and cheese. Quick pickles and fruit.
Or ...

I may just serve it cold with a warm BBQ type of dip, corn on the cob, quick pickles and fruit.

Both are easy; I guess I will decide at dinner time.

Happy Monday!!

Today ...
Just one of the ladies today - Lady #2: http://www.recipezazz.com/…/horseradish ... with-wilte…, served w/creamy parsnips

Me, a shrimp dish using my freezer stash tomato soup/sauce. I think I will spice it up w/some red pepper; and, maybe add some spinach, olives, onions. and some ouzo. Finish w/Feta, and served over rice (leftover from the other night). Maybe some fruit on the side.

Ellie, soup is always good for me. I could eat it several times a week; and often do.

Morning ... 4am kitties were hungry so, Mom's time to wake up

Lady #3+4 Company - Pan sauteed duck w/apple pomegranate glaze (apple juice, pomegranate juice, and brown sugar reduced); mashed potatoes w/caramelized onions (spuds, caramelized onions, mascarpone, broth); orange roasted green beans (beans and orange marmalade tossed and roasted); spinach salad w/orange segments and a pomegranate balsamic vinaigrette

Me: Blackened/Cajun catfish w/cucumber avocado salsa (cucumber, avocado, lime vinaigrette, garlic, jalapeno); pan sauteed polenta rounds; green beans and tomato saute

I still have lots of prep for my catering event Sat; but, just keep making lists, lol.
