Morning!

Dis, I love that ... who knew. sometimes, easy is good. Why not, right? Although, I have never had canned roast beef. I think ham when I was young. But, I have used canned chicken before. Sounds like you did a good job! Hey, it was liked, so that was a good thing.

I'm doing a cabbage soup for me as well this week. Have some veggies to use up; and some ham - figured I could make something.

Deepster, I love breakfast too. Dinner sounds good; although, I do limit how many eggs I eat. I do LOVE them however. But, sounds yummy.

Tonight's Cooking ...
Two (2) friends over - They are doing a Habitat for Humanity which will run late - so, I told them to stop by when done. I think a CORN night (clean out refrigerator/freezer night). I have mac/cheese, five bean salad; soup, 1/2 quiche, and burritos in the freezer. Salad, fruit, or veggies as well. They can pick - and, in to the microwave. Dinner is served!

I maybe have to make a salad or slice some fruit - but, that is it.

Sounds good Ellie. And yep, now and then ... just need to clean out a few things. The boys will be happy; and, I may send them home with something too. I saved a little mac for me too; but, there is still enough for them.

I had pasta nicoise. Whole wheat pasta, tuna, green beans, olives, chopped egg and arugula. Oil and vinegar to dress. Using up odds and ends in the fridge - but this is a favorite.

Cleaning up odds and ends is something I need to do, and the pasta dish sounds like a great idea, as I'm a big, big pasta fan! Not tonight, though. It's nearly 8pm and I haven't even begun to think of dinner. I was up way early this morning. Went into town.....came home early afternoon and ate a hot dog. I'm not even really hungry, just tired. I'm having a glass of wine, may have another, and call it a night. I think I could go to sleep right now, but I know I'd wake up at midnight hungry as H@##. and end up cooking.....LOL. I may just pull some split pea soup out of the freezer, heat up some bread, and call it a night :lol:

Tonight I made this great cornbread recipe http://www.recipezazz.com/recipe/cheesy-cornbread-12867 by member ellie it was really a great cornbread recipe, and I made some pork chops with an easy mushroom gravy.

Morning and ... Image

A cookout at a friends for the 4th. A whole roasted wild boar w/40-50 friends. Yes, they do it every year. I went over at 4:30 am to help prep and get it in the pit; and set up the tables in the barn for dinner.

I have 50 ears of corn in a salt/sugar brine in a cooler (husks on) to grill later at their house. Also, I'm doing grilled oysters in the shell with a mignonette sauce.

Every one has an assigned dish to bring; lots of dips; burgers, dogs, and chicken for NON pork eaters; and, tons of sides.
FYI, this is their 23 year of hosting this party - so they have it down pat!

Also, after that, cooking ... for Ladies #1, #2, and #3 - first time, they are all getting together for dinner
Cold grilled marinated chicken w/tomatilla salsa; tortillas and toppings, like sour cream, olives; corn and black bean salad; churros w/mango dip (no, I didn't make the churros).

The chicken is done, salsa done; just packing it all up; and drop it off this am. Easy peasy.

KareninMass, Newbie, and Ellie; sounds like everyone had good dinners.
Yes, Ellie we did a lot of damage on the leftovers, lol. A good clean out.

I hope everyone has a fantastic Fourth of July - whatever your plans may be!
