Afternoon and TGIF!

Got a late start today. Went in to work early. Today, no cooking for the ladies today; some benefit tonight.

Me, no cooking either. I have a container of bean soup, lasagna, turkey white bean chili, white chicken stew; and, pizza. So, I can have my pic. I have salad and fruit on hand, bread, or veggies. My first pic - chicken stew and fruit; we will see what I feel like.

Sue and Felix; sounds like a plan. I haven't had much time to read any posts today; and, now I have to get ready for my horseback riding/camping trip tomorrow. Sorry; back on later tonight, so I can catch up.

I'm thinking of doing a repeat of last night. I had some "bagged" baby greens with other veggies(spinach, kale, arugula, broccoli, cabbage, carrots). I added chopped mushroom, yellow bell pepper, sunflower seed, crumbled bacon, chopped boiled egg, sliced salad onion...it truly tuned into one mega salad. I baked a small loaf of deli French bread. Dinner was heaven. So, why not a reapeat? ;) ;)

Deepster - I love a big salad for dinner. You can really add anything; even bits of leftover chicken, ham, chick peas; and, whatever you have on hand.

One of my favorite dinners. I wouldn't mind a second night. I have no problem with repeats :)

We have really fallen in love with Bea's http://www.recipezazz.com/recipe/south-west-rub-12059, and have made it with chicken 2 nights in a row.

I have no idea what to do tomorrow, I am perusing recipes! ;)

Morning Everyone!

HAPPY MEMORIAL DAY WEEKEND!
I hope everyone has a safe and happy weekend, whatever your plans may be.

Horseback riding w/4 friends; and camping over night. They are all foodies ... so we try to out do one another. Last time we had a seafood feast - I can't out do him, but; this should be pretty good. Everything cooked on the open fire pit.
Leaving around mid day; back mid day tomorrow

- Jalapeno popper quesadillas w/toppings; avocado, sour cream
- Chicken w/onions, mushrooms, marsala in a foil pouch
- Cheesy potatoes, also in a foil pouch
- Grilled romaine w/cherry tomatoes and a Greek dressing in a foil pouch
- S'mores in foil pouches or on skewers for those with a sweet tooth

Since, I don't have internet while camping -
Sunday Breakfast: Chorizo eggs w/peppers; ham steaks; toast with mango strawberry freezer jam; of course bloody mary's

My herbs are already sprouting, even though I just started the seeds on Thursday! :D

I had a blast horseback riding and camping; lots of fun. Today, planned breakfast w/gf, but she didn't feel well. Stopping by at a friends who are having a BBQ; just to say hi and have a cold beer.

Ladies #1, #2, #3: Baked mac and cheese; pulled pork sandwiches, w/slaw; tomato cucumber salad; watermelon

Me: I'm thinking meatloaf, carrots; roasted potatoes

After the cemetery (I bought two flats of flowers for forgotten soldiers' graves), I'm making some Cheesy Frittata Squares (an old recipe I've never bothered to actually write down, but will make notes this time). I'll add the leftover couscous from t'other day and some cottage cheese on the side.
