Now it works; not sure what I did wrong.
This is a recipe by Bergy. I have one on another site; but, it is Mexican based. Both are pretty much the same.
This one I did all veggie. The only thing I do different, is I like to just nuke all my vegetables for 1 minutes, so they aren't raw when I add them.
Today I used mushrooms, onion, 3 peppers, fresh spinach and tomato.
I did nuke the mushrooms, onions and peppers for 1 min on medium, just to lightly soften before adding to the omelette.
Otherwise same method. I served mine with a hollandaise sauce.
But, I have made one just like Bergy with salsa too.
You can really make or do any combo you like. I have done ... ham, broccoli, mushrooms and made a cheese sauce; or just cheese in the omelette.
I'm done spanish with chorizo and olives; or Greek with Feta cheese, olives, spinach, sun dried tomatoes, etc.
Sauce on top or not. Either way you serve it is easy and fun. Just slice and serve.
