What WAS on Your Plate & and WHAT'S for Dinner 8/10

HAPPY HUMP DAY!
What's on your menu?

Well, it finally stopped POURING DOWN RAIN; but, still soggy. Today, hoping to clean up the grill a bit; but no cooking. Last night was simple spaghetti leftovers. And, tonight ...

Me: Meeting a group for Happy Hour to go over plans for a friends potluck BBQ this Sat. Six (6) of us are making sides to bring; I'm sure appies will be involved, so that will be dinner

Tonight I think it's goat cheese stuffed turkey burgers and fresh red beets with a cherry glaze topped with crumbled goat cheese and fresh basil.

Yummy. That sounds delicious. It's been so wet here, more like soggy; I'm afraid to grill tonight.

Throwing some burgers on the grill tonight, I don't do a lot of fancy cooking in the summer especially on weekdays

We ordered out some bbq- wasn't that good. They had loaded potato salad tasted like loaded mashed with a touch of vinegar. Yuck. Ribs were steamed and the sauce was second rate.
I wish we had gone to a place on the East side but it was sort of far.
Not sure what is up for today and since I don't have anything defrosted I've sort of corned myself. Maybe some salads.

Hey burgers are always good. Throw some corn on the cob; and, I would be very happy!

Yep, good BBQ, has to be good BBQ! There is only one place in town I will get it; and, they have been here for ages. I guess that is why.

Well, nothing wrong with salads tonight; that is good summer food.

I have a container of cooked brown rice in the freezer I need to use up, I'm going to thaw and make fried rice also throwing in some cooked shrimp, this is a really easy basic recipe

3 cups cooked white rice (day old or leftover rice works best!)
3 tbs sesame oil
1 cup frozen peas and carrots (thawed)
1 small onion, chopped
2 tsp minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce
pepper

On medium high heat, heat the oil in a large skillet or wok. Add the peas/carrots mix, onion and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and stir fry until scrambled. Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated. Add pepper, serve!

Sounds delicious cagey; fried rice is such a great way to use up proteins and veggies in your fridge. I don't think mine is ever the same, lol.
Great quick dinner, love it. Add shrimp ... and even better!!

59, fresh corn is my weakness, I love it. I could eat it every day!
