What WAS on your Plate & WHAT'S for Dinner Tonight 2/26

TGIF!!!!

Tonight is a special game card night for one of the ladies I cook for. Most Friday's they have a Game/Card Night - Anywhere from 4-16 people. Dinner is always different.

This Friday is a special day for one couple who is 92 and 94; and, they love southern food. So this is for them.

- Peach old fashioned cocktails
- steamed crawfish w/remoulade
- oven baked fried chicken (boneless breasts and thighs)
- collards (crock pot new recipe to post)
- mac and cheese (my version; just noodles and cheese added to a dish; mix milk, flour, and seasoning and pour over the top - bake)

I prepped last night, so, almost everything is done. Turn on the crockpots, and bake a couple of things; and presto.

Me: Salad w/artichokes, olives, warm tomatoes, onions, Feta; bread; fruit

Thx Brandie, appreciate it. And, yes ... the beach is awesome. It is a FL perk. 10-12 minutes down the road. It does spoil us, trust me. Ellie, salmon is always good; I'm having grapes too with my salad and ... FL strawberries. The festival is coming up here in Plant City FL which is always a great time. I will be eating LOTS of strawberries after that, lol.

I was going to make chili tonight, but my husband just got his labs back and his potassium was elevated. So no tomatoes or kidney beans. So I made my Southwestern White Chili, http://www.recipezazz.com/recipe/southw ... chili-6816. Well sort of. I used ground beef instead of chicken, chopped green beans instead of white beans, and beef stock instead of chicken stock. And some homemade Fluffy Corn Bread http://www.recipezazz.com/recipe/fluffy-corn-bread-5287, with honey butter.

I made a meat pie for tonight, it would have been better with cooked roast I used ground beef so it was okay but not really great.

Lovin, great switch up for the chili. Got to watch those levels; but, it sounds like your change would taste pretty good.

Foodnut, a roast is always; but, I bet it still tasted good. And, yes, the beach is nice ... definitely a perk for sure. I often go out early am for walks or sunsets. Just nice to get out there.
