What WAS on your Plate & WHAT'S for Dinner Tonight 2/19
Today I am having a late lunch with a good friend ... that comes in to town now and then. Out to our fave little place on the water. It will be grouper reubens for sure; and, either scallop chowder or calamari to start. The sandwich is so HUGE, we always share it. You can barely bite in to it. Thick grouper, kraut, provolone, rye, thousand island - it is so good. Add fries and beer, and I'm beyond stuffed!
So, what's on your menu tonight? And ... any plans for the weekend?

Servings: 6
Ingredients:
8 pieces Chicken Tenders
4 Tablespoons Velveeta
⅔ cups Plain Yogurt
1 can (10 Oz. Size) Rotel
½ teaspoons Chili Powder
⅔ cups Cooked Rice (optional)
1 can (15 Oz. Size) Beans (optional)
1 cup Shredded Cheese
Fritos, For Garnish
Instructions:
Spray a 7×11″ baking dish with nonstick spray, then line the dish with the raw chicken tenderloins. Melt the Velveeta in a large microwave safe bowl. Stir in the yogurt, Rotel, and chili powder.
If you are making the casserole version of this dish, stir in the rice and beans as well. Pour the mixture over the chicken, top with shredded cheese, and bake in the oven at 350ºF for 30-40 minutes.

Tonight we just had a huge garden salad topped with grilled chicken breast and homemade croutons.

I saw this on the main page, it looks so good and lower in fat also, I like that!
