Chili last night for me; and, the party for Lady #3 and her charity went over well. Everyone loved making their own pizzas.

Here's a few. I cook with them often; I grow tomatoes, so I dry a lot of them.

A sundried pesto is really good to toss with pasta as a side dish; or add chicken for a main dish. http://www.recipezazz.com/recipe/steame ... pesto-9448

And, dinner sounds good Ellie! Sundrieds are a favorite of mine. You can do so much with them.

Also, try just pulsing it in the food processor with a little mayo, s/p. Makes an awesome spread for a burger or sandwich.

The sun-dried tomatoes I have are not packed in oil - they come in a huge bag - but love these recipes.

You can always re-hydrate them in oil in a small baggie or tupperware container. Just let them soak for 5 minutes in hot water; drain, add oil; and, put in the fridge. They will last a couple of weeks. I usually just make enough for a couple of dishes.

And, you are welcome. Pesto is one of my favorites.
Top a baguette with the pesto and a slice of fresh mozz.
