have a huge bag of sun-dried tomatoes I bought at Costco and looking for ideas to use it up.

Also, try just pulsing it in the food processor with a little mayo, s/p. Makes an awesome spread for a burger or sandwich.

The sun-dried tomatoes I have are not packed in oil - they come in a huge bag - but love these recipes.

Top a baguette with the pesto and a slice of fresh mozz.
