
Vegetable Brown Rice

This was delicious! Pressed for time and having been spoiled with a rice cooker, that was how the rice was made. Having forgotten to add the basil to the rice, it was added with the other seasonings. Chopping the vegetables as instructed was cumbersome (and a little dangerous), so next time the carrots and green onions will just be sliced thinly. Next time, a couple of vegetable broth cubes (frozen in ice cube trays) will be substituted for the oil. The oil and the slicing instructions were the only reasons this didn't get 5 stars...the flavor was just fine! Since the peas came in a 10 oz. bag, which equalled 2 1/8 cups, all the peas in the bag were used. Perhaps 2 large carrots will be used next time for balance. This was a great side or main dish and worked well for our potluck. This will be made again! Thanks for posting it.
