Step by Step Method
Step 1
In a saucepan, sauté the crushed garlic in the oil over medium heat until just golden.
Step 2
Add the red curry paste and continue stirring for 2 minutes.
Step 3
Add the coconut milk, sugar, and lemon grass.
Step 4
Heat for 10 - 15 minutes.
Step 5
Add the lemon juice.
Step 6
Remove the lemon grass.
Step 7
Add the ground peanuts and continue cooking until the sauce begins to thicken.
Step 8
Season to taste with salt and pepper.
Step 9
Set aside and cool.
