Nin, I hope you feel better. HF, I need to do yard work this week too. At least it is cooling off a bit which is nice. Beautiful mornings and evenings.
Some lots of work to do today, from home; but will be working midnights tonight.
So, a bunch of stuff to do.
Dinner ...
Catered Lunch: Last Week
Italian salad stuffed pasta shells and Deli Meat Rolls
Pasta shells, stuffed with an Italian salad (olives, roasted red peppers, hot peppers, onions, cucumber, tomatoes, romaine and iceberg - all small chopped), served with an lemon herb Italian dressing; served with deli meat rolls. Turkey, honey ham, and salami spread with an olive cream cheese; proscuitto wrapped melon; and, honey ham and turkey with a bacon pimento spread; basket of Italian crackers
They are already packed up to be delivered.
Ladies #1 and #2: Beef tips in a red wine, mushroom, and onion gravy, served over egg noodles; classic salad with romaine; pumpkin cake with pecans
I dropped it over early this am and plugged it in. I will go back later to take their salad and dessert.
Me: I had to change my nights around - it happens.
Tilapia pan seared with mixed peppers on the grill (in my cast iron), salad with grilled tomato slices and olives.

I'm going to meet a colleague at a restaurant for a business dinner, and one of my kiddos is going to a Mariners game, so the other two boys in the house can eat whatever they want.

Yes, the shells are always good. You can stuff with your favorite; great party food, lunch food, or a light dinner.

Today I've got a re-training session on how to run a hockey game before the season starts, plus I've got to cram a week's worth of housework into my half-day off. Luckily, I made that vat of stew yesterday, so we're having leftovers.

IF I get out in time to make dinner, I'm broiling some boneless pork chops and serving a couple of vegetables on the side. If I don't, then it'll be leftover stew again.

I also made a simple squash casserole that turned out well.
Tonight's planned meal is my low carb staple of Tarragon Chicken. Not sure which veg I will end up making - cauli or brocc usually, but I might make sweet potatoes since I have some in the fridge.

Nin, haven't seen you on, but I hope you are recovering. Being sick is NOT fun. Take care of yourself.
Well, rain all around, but not much here, a bunch to our South, and we hopefully will get some over the next couple of days. We really need it. Cloudy and somewhat dreary; but I don't mind, we don't get that too often here. Worked midnights, so a bit tired; but can't sleep and lots to do today. I can sleep tonight, lol.
Tomorrow starts the last 3 days of my lunch catering; so we will be doing a buffet and the lunches are a bit more fun, since their training is over. So, I will be heading over to the kitchen to prep for tomorrow, lots to do.
Dinner ...
Catered Lunch: Mexican Club Sandwiches
Tortilla layered club sandwich
A lightly toasted tortilla, topped with lettuce, pepper jack cheese, turkey, and guacamole; another tortilla, topped with lettuce, pepper jack cheese, tomato, bacon, and a mix of salsa and sour cream; finish with the top tortilla. Cut in wedges
On the side, a corn and black bean salad.
Me: Beef tips, onions, and mushrooms, in a brown/red wine gravy; served over buttered noodles, with cucumber, tomato salad.
