Step by Step Method

Step 1

Preheat your oven to the broil setting.

Step 2

Place the thick slices of bread on a baking sheet and toast them in the oven until golden brown on both sides. Keep an eye on them to prevent burning. Once toasted, set aside.

Step 3

In a medium-sized saucepan, melt the butter over medium heat.

Step 4

Add the flour to the melted butter and whisk continuously for 1-2 minutes until it forms a smooth paste, known as a roux.

Step 5

Stir in the Dijon mustard, Worcestershire sauce, hot sauce, smoked paprika, salt, and black pepper. Mix well to combine the flavors.

Step 6

Gradually pour in the milk while whisking constantly to create a smooth sauce. Continue to cook and stir until the mixture thickens, about 3-4 minutes.

Step 7

Reduce the heat to low and add the grated cheddar cheese to the sauce. Stir until the cheese is fully melted and the sauce is smooth and creamy.

Step 8

Remove the saucepan from the heat and let the mixture cool slightly, allowing it to thicken further.

Step 9

Spread a generous amount of the cheese sauce over each slice of toasted bread, making sure to cover them completely.

Step 10

Place the topped bread slices back on the baking sheet and broil in the oven for 1-2 minutes, or until the cheese sauce is bubbly and lightly browned.

Step 11

Remove the Werewolf Welsh Rarebit from the oven and let it cool for a minute or two.

Step 12

Garnish the rarebit with crumbled bacon (if desired) and chopped fresh chives or parsley.

Step 13

Serve the Werewolf Welsh Rarebit immediately while still warm and enjoy the gooey, cheesy deliciousness!
