Step by Step Method

Step 1

In a heavy saucepan, combine the first 6 ingredients; heat over medium heat until sugar dissolves, stirring frequently.

Step 2

Continue heating until mixture begins to boil, stirring constantly.

Step 3

Continue boiling until candy thermometer reaches soft-ball stage (234-243 degrees).

Step 4

Remove pan from heat; stir in chocolate chips until melted.

Step 5

Add in remaining ingredients; stir to mix well.

Step 6

Pour into a buttered 13x9 inch baking pan; cool to room temperature.

Step 7

Cut into squares; store in the refrigerator in an air-tight container.

Easy and tasty fudge recipe. I started to make this and then realized I only had a small amount of white chocolate chips left so I quickly looked up substitutions for white chocolate and read that good white chocolate is made with cocoa butter and has the cocoa solids removed. It said milk chocolate is a substitute because it's the exact same ingredients but has the cocoa solids. Well, I had a bag of good milk chocolate so went for it. I figured chocolate never messed anything up and it goes well with pumpkin and spice. While I was stirring the chocolate into the soft ball mix, I got the sudden idea that dried cranberries would go well with all the flavors in the fudge and would add a welcome chewy tartness to the extreme sweet...so in went a cup of them too. It turned out good but very sweet. The pumpkin and spice was also very subtle probably because of the milk chocolate. Freddy Cat says thanks for the candy! Made for the Recipebook tag game.
