Step 1

Peel eggplant and cut into 1/2-inch slices.

Step 2

Sprinkle each slice with salt.

Step 3

Let stand for 30 minutes.

Step 4

Rinse and drain well.

Step 5

Combine flour, salt, and pepper, then add milk, egg yolks, and butter, mixing well.

Step 6

Dip eggplant slices into batter, and fry in hot oil until golden brown.(I'm using deep fryer)

Step 7

Adding more oil as needed eggplant soaks it up

Step 8

Drain and serve immediately.
