Step 1: Peel eggplant and cut into 1/2-inch slices.
Step 2: Sprinkle each slice with salt.
Step 3: Let stand for 30 minutes.
Step 4: Rinse and drain well.
Step 5: Combine flour, salt, and pepper, then add milk, egg yolks, and butter, mixing well.
Step 6: Dip eggplant slices into batter, and fry in hot oil until golden brown.(I'm using deep fryer)
Step 7: Adding more oil as needed eggplant soaks it up
Step 8: Drain and serve immediately.
