Step by Step Method

For the Vanilla-Infused Salt (optional):

Step 1

Slice the vanilla bean open, lengthwise. Then cut the bean into quarters, crosswise.

Step 2

Place the vanilla bean in a small glass jar and cover with the salt. Cover the jar and shake well. Allow to rest for at least 30 minutes before rimming the margarita glasses.

Step 3

Pour some of the salt onto a small plate (if not using the vanilla-infused salt, use kosher salt instead). Wet the rim of a margarita glass with a lime wedge, then dip it in the salt, turning the glass so that the rim is covered in vanilla salt. Fill the glass with ice.

Step 4

Combine the tequila, lime juice, triple sec, marmalade, vanilla extract, and some ice (about a 1/4 cup, but the amount doesn't need to be exact, just use enough as you like) in a cocktail shaker. Cover and shake until the shaker is chilly and frosted over. Strain into the prepared margarita glass, and garnish with some lime and orange slices. Serve immediately.

Not a big fan of Margaritas usually, but we were having a Stanley Cup watch party with Mexican themed appetizers so decided to try this. The marmalade cuts the acidity of the lime juice, which is the part of margaritas I don’t care for. I liked this version, although I did not make the vanilla salt, but used margarita salt for those who wanted salt. (I don’t).
