"Libbie made this in duck and goose and rarely turkey she had some green onion tops that she used in a lot of recipes they are similar to scallions ,so that's what i used,I don't know how to put in the giblets for the recipe ,use the heart liver and gizzard,Libby ground them I'm going to say mince,she probably used celery leaves because they ate the celery raw unstuffed"

Step by Step Method
Step 1
Simmer the giblets in water for an hour.
Step 2
Cool mince them save water.
Step 3
Meanwhile soak bread in milk.
Step 4
When giblets are done add to bread with rest of ingredient's add enough water to make a sticky bread consistency.
Step 5
Stuff into which ever bird you are using and bake until bird is done.
