Step by Step Method

Step 1

Place oil in large stockpot over medium heat.

Step 2

Blend in flour.

Step 3

Cook, stirring constantly, until deep golden brown, about 30 minutes.

Step 4

Stir in onions, peppers, celery and garlic.

Step 5

Cook, stirring constantly, until vegetables are softened.

Step 6

Add duck, stock, tomatoes, Worcestershire sauce, salt, pepper, oregano and thyme.

Step 7

Bring to a boil, stirring occasionally.

Step 8

Reduce heat and simmer, uncovered, 30 minutes, stirring occasionally.

Step 9

Stir in okra.

Step 10

Simmer 30 minutes more.
