Step 1: Place oil in large stockpot over medium heat.
Step 2: Blend in flour.
Step 3: Cook, stirring constantly, until deep golden brown, about 30 minutes.
Step 4: Stir in onions, peppers, celery and garlic.
Step 5: Cook, stirring constantly, until vegetables are softened.
Step 6: Add duck, stock, tomatoes, Worcestershire sauce, salt, pepper, oregano and thyme.
Step 7: Bring to a boil, stirring occasionally.
Step 8: Reduce heat and simmer, uncovered, 30 minutes, stirring occasionally.
Step 9: Stir in okra.
Step 10: Simmer 30 minutes more.
