Ingredients

The ingredients are:
  • 3/4 cup oil (vegetable oil)
  • 3/4 cup all-purpose flour
  • 6 medium yellow onions, finely chopped
  • 3 medium green peppers, finely chopped
  • 2 cups celery, finely chopped
  • 3 cloves garlic, minced
  • 4 cups cooked duck
  • 4 cups duck stock (or chicken stock)
  • 1 can (28-ounce) tomatoes, drained and chopped
  • 1 to 2 tablespoons Worcestershire sauce
  • 4 1/2 teaspoons salt, or to taste
  • 1 1/2 to 2 teaspoons black pepper, or to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 package (10 ounce) frozen okra

How to Make

  • Step 1: Place oil in large stockpot over medium heat.

  • Step 2: Blend in flour.

  • Step 3: Cook, stirring constantly, until deep golden brown, about 30 minutes.

  • Step 4: Stir in onions, peppers, celery and garlic.

  • Step 5: Cook, stirring constantly, until vegetables are softened.

  • Step 6: Add duck, stock, tomatoes, Worcestershire sauce, salt, pepper, oregano and thyme.

  • Step 7: Bring to a boil, stirring occasionally.

  • Step 8: Reduce heat and simmer, uncovered, 30 minutes, stirring occasionally.

  • Step 9: Stir in okra.

  • Step 10: Simmer 30 minutes more.
