"Mainly due to the title, I couldn't resist this recipe from "Cool Cuisine" (Traditional Icelandic Cuisine) by Nanna Rognvaldardottir. Per her intro: "These deep-fried balls should be eaten hot or warm. DO NOT make them too large or they will darken too much on the surface b4 they are cooked thru." This is your basic raisin fritter & is commonly used as a small sweet treat for children (after school & otherwise). Enjoy!"

Step by Step Method

Step 1

Whisk eggs & sugar in a bowl.

Step 2

Mix flour, baking powder, cardamom & salt. Stir this mixture into the egg mixture, alternating w/the milk. (NOTE: You may not need all the milk. The batter should be thick & almost able to hold its shape.)

Step 3

Fold in the raisins. Heat oil to 365F.

Step 4

Shape balls using 2 tablespoons & fry 5-6 at a time for 3-4 min or till med-brown & puffy, turning several times to cook evenly.

Step 5

Remove w/slotted spoon, drain on absorbent paper & repeat process to use all batter.

Step 6

NOTE #1: Serving size is 2 "Love Balls" per person.

Step 7

NOTE #2: I was surprised there was no mention of plumping the raisins. I would favor doing that, but it's your choice.

Smells Like Salad

These were perfect with our tea for Elevenses the other day! The first few astarpungar that I made flattened out and looked more like little potato pancakes. I added some flour to thicken the batter and that worked out. We actually preferred the test batch with less flour (crispier!) but either way both versions were delicious! I sprinkled the astarpungar with a light dusting of powdered sugar and cardamom. The amount of raisins was cut in half (daughter is not a fan of raisins). The milk was whisked into the eggs and I skipped alternating adding the ingredients. Made for the FTT game. Thanks, Twiss
