Step by Step Method
Step 1
Peel and dice eggplant.
Step 2
Crush ritz crackers.
Step 3
Layer in greased 1 1/2 quart casserole layer of eggplant, clams milk and lemon juice mixed together, then cracker crumbs (do this 2 times).
Step 4
Dot with butter.
Step 5
Bake at 360 for 40 minutes.
