  • 2 cans (7 1/2 ounces each) clams, minced
  • 2 tablespoons lemon juice
  • 2 cups cracker crumbs (Ritz)
  • 4 tablespoons butter

How to Make

  • Step 1: Peel and dice eggplant.

  • Step 2: Crush ritz crackers.

  • Step 3: Layer in greased 1 1/2 quart casserole layer of eggplant, clams milk and lemon juice mixed together, then cracker crumbs (do this 2 times).

  • Step 4: Dot with butter.

  • Step 5: Bake at 360 for 40 minutes.
