hum, does it say how long you can store it that way? I've heard of using apple slices for moisture,but celery?

No, it doesn't say, just says, store your fresh bread on the counter with a stalk of celery to keep it fresh, do not refrigerate as that will cause it to go stale faster.

Ok Galley this is what it says, word for word. Went and got the book.
Keeping your bread fresh: There are no preservatives in your homemade bread, so store cooled loaf in a lightly sealed plastic bag. If desired, enclose a stalk of celery in the bag to keep the bread fresh longer. DO NOT store in the refrigerator as this causes the bread to dry out faster.

But with my experience, refrigerating the bread makes it easier to slice....But according to the directions, it is also drying it out.

Almost all of my bread I make in the ABM. I have a couple of recipe where I use the ABM, but then make the rolls in the oven. I automatically freeze them, once cooled. I use a double freezer baggie; and they hold up really well.
I do buy a loaf of this 7 grain bread from one of my local grocery store (Sweetbay), which I use for sandwiches. But 1 loaf last me a long time. That I also keep in the freezer.
My ABM loafs, like many - if I know I am going to use it up in a couple of days I refrigerate it; easier to cut.
Otherwise, I thick slice and freezer in double freezer bags. I can just grab a slice or two when needed.

If it's not eaten right away I've always frozen the bread, never stored in the fridge.

If you want wheat bread simply sub wheat flour for up to half of the white flour. Recently I started using extra virgin coconut oil and like the bread even better (IF that is possible.

) I use a Tupperware container for storage.

I've never used extra virgin coconut oil, especially in bread. What does it do? Does it give a different flavor or texture to the bread? Does it taste like coconut? I'm intrigued! I must try that!
