I am not cooking today. So everyone is on their own. (it's not like there isn't any leftovers, I am just not cooking) :lol:

Afternoon All!

I posted earlier ... and geeze, it was there ... and now it is gone. I even read it. This seems to happen all the time.

Oh well.

Me: OUT to our favorite Mexican place for Happy Hour
They have build your own basket (select from 12 items, and you get 6 for 5 dollars). So, we end up getting 4 or 5 baskets, all mixed up; also they serve free dip; and 2/1. You can stuff yourself, and get a bit tipsy for $15-20, including the tip. It is a local joint, so locals, no tourist, casual relaxed; and it is a small little hole-in-the-wall, which I love. It's lots of fun.

Ladies #1 and #2: Card/Game Night - Soup and Sandwiches
My steak and potato soup; a turkey, tortellini and spinach soup (both from here); and grilled cheese dippers, made with different breads and cheeses. An olive and pickle tray, some crackers with salami and probably pickled herring or some type of dip. They love that stuff).

Morning Everyone!

Well, the rain is gone, but it might not make it to 70 today, 30's tonight, and maybe 60 tomorrow. So a few cool days - not as cold as they thought.

Hit the market a 7am, and got a few veggies for the week. Got some beautiful small eggplants; not sure what I'll make with them, but they looked so good. Maybe an Eggplant Casserole later this week.

Today ... Easy
A lonely smoked chicken quarter in the freezer from a couple of weeks ago, will be added to ricotta, cream cheese, and fontini to make ravioli. I think I will serve it with a light pesto sauce. Mix shallots, white wine, and pesto, and just simmer. Drizzle over the ravioli. On the side, grilled romaine with a creamy caesar dressing and sliced tomatoes

I have no idea what we are having for dinner today. :-\ Maybe a mushroom omelet and some fresh bread.

Morning, all! Tonight will be pizza on some flatbread pizza crusts I bought at Target. I know one of them will be white sauce with chicken, bacon, jalapeno and tomato. For DH, pepperoni and the leftover veg in the fridge. Mushroom and onion, etc.

Wife worked last nite so dinner was beef jerky and beer, tonite will be cornish hens, asparagus and mashed potatoes.

A guy after my own heart ... I absolutely love Cornish Hens. They are so sweet, delicious and quick cooking. I'm sure it will be delicious!

But I am a little jealous of last nights dinner :)
