Good Morning Everyone!

Hope all of you up north are bundled up. Still bitter cold temps. Down here, cold this am ... 40; but mid to high 70's, even 80's through the weekend.

Today's Cooking ...

Lady #3: She and her daughter tonight, so wanted to do something special. Also, she just got off her walker, and is just on a cane, so, that means celebrate. Others at the facility (assisted living home) helped her celebrate last night too. She apparently has recovered quicker than any other patient (hip and spinal surgery). Kudos to Jerri!! She's a tough old bird :)

So dinner is - Veal bundles, stuffed with asparagus, proscuitto and provolone, pan seared and finished with hollandaise. Pretty classic; but, I know this is something she will really like. She loves hollandaise. On the side, a mix of wild mushrooms and wild rice w/scallions and white wine; and a citrus salad tossed with baby spinach.

Me: Freezer diving ... Corned beef hash from the CBC last week. Just enough to make a nice hash. I'll add some potatoes, onions, garlic, beef broth, and CB. Top with an egg, and the hash is done. I have some very sweet fresh cantaloupe too. Sort of a breakfast for dinner tonight.

And, I think I have just enough CB left for one more sandwich too.

Another batch of tomatoes in the dehydrator this am. They come out so good; and great to have on hand.

We have a Corned Beef in the crockpot for tonite. Have quatered onions on the bottom of the pot and kraut on top of the beef, all in a "milk stout". Smells wonderful right now.

Milk stout, sounds interesting. Clue me in. Interesting combo; I'm always curious about different methods for corned beef.

I loved mine; 6 meals out of 1; not including the 3 containers of soup in the freezer. So, I love making CB other than St. Patty's day.

Milk Stout is a very very dark beer ( stout ) similar to a Guniess. It is from a craft brewery and I believe milk is involved in the brewing process. That is all I know about it aside from the fact it is very flavorful.

Thx Shadows, interesting. I will look more into it. Love Guinness, I normally use it in my corned beef too.

Believe it or not the Brewer of that stout is called "THE DUCK-RABBIT Craft Brewery" in Farmville , North Carolina.
I belong to a beer of the month club and get some very interesting beers.

I got my now ex a beer of the month club and my father in law too. They found it lots of fun to try different beers. I have a local store that specializes in unique beers from all over. I'll have to check to see if they can get that. Sounds interesting.

Cammie, thx, but it was Chef Shape Weaver's turkey. She made Kittens recipe; I just commented; but thx should go to her. Yes a great looking turkey.
Cammie, your sammy sounds divine!! Nothing better than chicken, cheese and bread! How could you possibly go wrong? Add anything spicy for me - and I'm in.
