Dinner:
Tilapia with a thyme orange butter
Portabello stuffed with some of my olive butter, bread crumbs and artichokes
On the side ... grilled tomato slices topped with fresh mozz, over grilled romaine and a balsamic vinaigrette

Tilapia with a lemon thyme butter and lemon pepper. Garnished with fresh dill.
Grilled on the grates first, then finished cooking on the foil.
Portabello, stuffed with a marinated artichoke heart and some of the liquid, fresh bread crumbs, and 1 tablespoon my Mixed Olive Garlic Butter - finished with a slice of provolone cheese
A romaine heart brushed with olive oil, s/p; grilled tomato slices and avocado. Brushed with a lemon vinaigrette
No recipes - just using up a few items.

My favorite piece of equipment. Now, it's 80, sunny, breezy, humidity was down a bit, so WHY NOT grill. I could show you the corn in the husk cooking; or the rice in stages, but I am sure you can all figure that out ... so here was my night!
Chicken thighs, skin on and bone in (for flavor); seasoned with a steak seasoning and then grilled until golden brown. Transferred to my cast iron on the GRILL - with thin sliced sweet onions, lots of garlic, and a whole bottle of beer, chicken broth, fresh thyme sprigs and rosemary, then simmered on medium heat until tender and falling apart.
The sauce is thickened lightly at the end, with corn starch and white wine. The grill gives it a nice smoky flavor.
Corn ... soaked in water and grilled in the husk. Finished with a lime butter.
Rice ... YES ... ON the GRILL too. Sauteed mushrooms in an aluminum disposable pan until tender; then added broth and rice and cooked covered with foil until tender. I did use a quick cooking rice. Finished it with fresh chives.

There is nothing better sitting on the porch, glass of wine or cold beverage in hand grilling. Looking out at the lake, the birds and yes, the baby croc. Very relaxing.
I got a couple of shots of the chicken on the grill before I put them in the pan, but they didn't turn out ... sun spots. But grilling them first gives them really good flavor.

Grill Fest IV - tonight
Grilled zucchini and summer squash, stuffed with garden tomatoes, onion, scallions, mushrooms, corn and cheddar cheese. Topped with a little parm.
On the side, nothing fancy, grilled Hot Italian Sausage (but from a local meat market), and they are the best.
Watermelon.
Not nearly as much as the other nights, but still good.
