I roasted a leg of lamb last night for my Brittish husband. I have been wanting to make a Victoria sponge for a while now, glad to see your tutorial on this. Perhaps for Easter. I have been wanting to have a "tea" on Sunday afternoons with my family for a while.

I've been using this recipe for baked salmon forever so I am going to include it in this thread. I'm using half a slab of salmon here but this recipe works equally well with salmon fillet's as well, just reduce your cooking time (my rule of thumb is: 20 minutes per pound).
Serves 6
2 pounds of fresh salmon, bones removed
4-6 tablespoons of extra virgin olive oil
1 lemon, plus juice
1-2 tablespoons dried parsley
1/2 teaspoon ground black pepper, or to taste
Sea or Kosher salt, to taste
1/4 pound of butter cut into slices
Preheat your oven to 400F
Run your salmon under cold water then pat dry with paper towels. Set aside.


Add 2 or 3 tablespoons of extra virgin olive oil to the bottom of a oven proof dish.

Place your salmon in your dish and then add the last 2 or 3 tablespoons of olive oil over your salmon.

Next, cut half of your lemon and squeeze the juice over the salmon. With the other half of lemon we want to cut fairly thick rings and place those on top of the salmon.


Sprinkle the salmon with the 1/2 teaspoon of ground black pepper and salt.

Next we want to add the dried parsley.

Add your butter slices to the top of the salmon.

Cover the oven proof dish with tin foil making sure to seal all the edges.

Bake in your preheated heated oven for 45 minutes. Remove and let rest for a few minutes.

Plate your fish and serve immediately with vegetables of your choice. Enjoy!
