I have been making cretons since I was a child with my grandmother and still make it now, at least once a month. I saw this recipe and was intrigued as it used non-traditional ingredients, so I was curious how the beef broth would work with the pork and what would the bacon grease add to the flavor. Also, this recipe does not have the bread crumbs I am used to using, and was curious again as to how it would hold together.
This did turn out tasty with a slightly different consistency than I am used to, but we enjoyed this version of it.
