Don't be shy of the garlic it is wonderful. My beets were medium size and only took 70 minutes. Definitely worth the roast time. I'll be making this recipe again

Oooo, I will have to try that, looks delicious. I hate peeling beets, they stain my nails

Thanks Bea. That's why I hate cooking them the stained fingers & nails are there until at least the next day. I hate gloves so that's not an answer.

Thanks Dissie - The garlic gets a really mellow flavour and even with so much it does not over power
