This was the first time that I have seen it here. We have Buffalo all the time because we have a couple of Buffalo ranches near by.

Ive never had elk is it like beef?

It has a slightly wild taste but not too strong. I find it hard to describe perhaps Bea can describe it better. I found it tobe very plesant.

It is very similar to beef in taste, but more like moose meat. Slightly gamey but not as gamey as venison. Althought it is closer to moose in taste, it is more similar to venison when it comes to how lean it is.
