Crock Pot Corned Beef

Every once in a while a local butcher makes his own Corned Beef and when I see it I always pick up a piece. It is so good. I love it with sauerkraut instead of cabbage Mmmm. It comes out so moist & tender. I like to add some new carrots so your whole dinner is in the pot.

You know I love corned beef. I only make it from scratch 1x/yr; but, I'll take any good deli corned beef year round to make something like this. Sounds wonderful. Kraut or cabbage both work for me!! Great dinner.

Thanks Red & KC I have made my own corned beef but that was years ago when I had more energy. Now I love finding good ready made.

Actually it is so simple. It's just a brine. Put the beef in a bag in a pan, in the fridge. Every day, just flip it over. 5-7 days later, done. Then, rinse and cook however you like.
