What Was on Your Plate? And What's For Dinner Tonight 11/14

Morning All!!

I would love to hear from DG; so, we can combine our threads and get one post going.

In the mean time ... What's on your table? It's Sat, and a busy yard day for me; so, easy peasy for me.

I have some homemade fried rice and egg rolls from last week in the freezer ... so, that is it for me tonight. Just reheat and done.

However; I'm hoping to pick up some baby cucs at the Farmers market; and, make some of my refrigerator pickles. I'm addicted to them. http://www.recipezazz.com/recipe/garlic ... ckles-2836. I keep them on hand all the time.

The Smoked Salmon Fishcake!!!

with fries - broccoli/peas/Green pepper medley and
Malagueña Lemon and Dill Vinaigrette
30ml/2tbsp Extra Virgin Olive Oil
15ml/1tbsp White Wine Vinegar
¼tsp Garlic - finely chopped
1tbsp Dijon Mustard
1tbsp Dill - finely chopped
Squeeze fresh Lemon Juice - to taste
Salt and freshly ground Black Pepper

In a small bowl, combine, stirring well, the mustard and vinegar together;
Add, stirring continuously, the dill, garlic and lemon juice;
Gradually, whisking continuously, add the oil;
Season, to taste, with salt and pepper;
Serve or can cover and leave to sit for 30 minutes or so before using.

I have leftover beef roast in the freezer I'm taking it out and making beef sandwiches with fries for tonight :)

I'm going to try this recipe I may add in a few more things though :D

Meatball Parmesan Casserole
Cook time: 15 mins
Total time: 15 mins

Ingredients

1 bag of frozen meatballs, cooked according to package directions
pasta sauce
2 cups shredded mozzarella cheese
1 cup shredded parmesan cheese
italian seasoning, to taste

Instructions

Preheat the oven to 350 degrees.
Spread some pasta sauce into the bottom of a 3 quart casserole dish to prevent the meatballs from sticking. Arrange the precooked meatballs on top. Pour more pasta sauce on top to cover the meatballs to your liking. Sprinkle with shredded mozzarella, parmesan, & some italian seasoning to taste.
Bake for 15 minutes in the preheated oven.

Last night had breaded, baked tilapia, baked potatoes and pepperoni rolls.
Tonight it's hot roast beef sandwiches with mashed potatoes and gravy over top of it all. Comfort food! Yum! :-P

Good Saturday morning cooks! Well looks as if I'm doing the grill thing again, salmon steaks and asparagus also making a mexican rice dish from this site, http://www.recipezazz.com/recipe/spicy- ... deal-14108 sort of a healthy meal I guess :lol:
