So ... First post.

Tonight, Ladies #1 and #2: Heading to some event - taking over http://www.food.com/…/cracker-barrels-h ... casserole-…; I don't think it is authentic Cracker Barrel, but they love it.

Me: I have been asked to attend a promotional cocktail party for a new restaurant. Not always my favorite thing; but, a fellow chef asked me to go. I guess I will have to get out the high heels. So, I think an early lunch for me; then, I'll enjoy the party. Being a restaurant party ... there is usually always plenty of food.

I also need to find a good biscuit recipe here. Need to make some this weekend. ME and BAKING do NOT like one another. I can bake, just don't like it. Need to make 6 dozen, OMG!!!

Tonight were having a baked mac & cheese with sliced hot dogs in it, it's a new recipe I trying!

Were having a special Rememberance Day Meal at my auntie's house, can't wait. Roast beef yorkie pudding and God knows what else.

my favourite meal. Pork chops mashed potatoes asparagus. Just to bump things up here, you understand ;) :D

Trying a new Indian recipe :D

SPICED INDIAN RICE WITH SPINACH & CASHEW NUTS

2 tbs oil

1 tbs ghee or unsalted butter

1 onion, finely chopped

2 cloves of garlic, crushed

3 tomatoes, finely chopped and de-seeded

10oz easy cook brown rice

1tsp ground coriander

1tsp ground cumin

2 carrots, coarsely grated

1¼ pints boiling vegetable stock

6oz baby spinach leaves, washed

2 oz unsalted cashew nuts, toasted



Heat oil and ghee (or butter) in a pan, add onion and fry gently for 6-7 mins until soft. Add garlic and chopped tomatoes and cook for 2 more mins.

Rinse rice under cold water and add to pan. Add coriander and cumin and stir. Turn off heat and put into slow cooker pot. Stir in carrots and add stock. Season to taste. Put slow cooker on High and cook for 1 hour.

Place spinach on top of rice and leave to cook for 30-40 mins so the spinach has wilted and rice is cooked. When cooked, stir spinach into rice and season further if required. Sprinkle with toasted cashews and serve.
