at this point in time...I have no idea. Possible our trip might be canceled. the biggest campground that we were going to check first for openings flooded last night and they are moving people to the dry area which was being saved for 'first come first served' spots which couldn't be reserved.
I'm wondering if God is trying to tell us to stay home...????

I'm doing something with pork, and an Italian Bean salad (recipe from Recipe4Living.com). And lord help us, there's still enough coleslaw left (and it's still good) to have again.

CarolJ, I hope your trip doesn't get cancelled.
Ellie, your chicken sliders sounded good.

I was oh, so VERY wrong about the coleslaw!
New plan: Boneless pork loin chops in a balsamic marinade (from Weight Watchers), the Italian Bean salad (which I've tweaked), and a recipe of Kitten's she hasn't posted here (I got it from F.com) called Maple Brown Sugar Baby Carrots, except I'm using whole sliced carrots instead.

Came by to get motivated, this working about around the clock for days foumd me too tired to do much more than grab a banana or some chicken slices. Out youngest gs is spending time here so we have had omelettes and healthy pan breakfasts.
I read your menu Kim and think I am actually hungry - love cabbage soup - guess who has to add cabbage to her shopping list!

Love cabbage soup. She was pleased. Added tons of veggies, and a little ham for flavor.
She loves soup, so she was happy. It's healthy and easy too. Feeds a crowd. Just add anything on the side.

Breakfasts for dinner are always good for me.
Soup and some type of casserole is great to have on hand.

Everyone knows(I think) how much I love breakfast any time of the day. I did a frittata for lunch. Tonight I'm doing a skillet meal of bacon, fried potatoes and onions....carrot salad for a side....a super, super easy meal.

Cabbage soup is one of my favorites!
Tonight I completely copped out. Hubby bought a can of low sodium roast beef. I KNOW A CAN OF ROAST BEEF! Well, I made brown gravy, put the meat in the gravy, made instant mashed potatoes, added peas and a salad and that was dinner! DH loved it! He ate the gravy over bread and the potatoes. I couldn't believe how much he liked this simple silly meal!

It was filling and easy, so I guess I can't complain too much. Dinner took 10 minutes to make.
