Hi, Bah humbug day is nearly upon us!! __panning ,planning planning -- Traditional or with modern change touches -- Let's know -- Always need good ideas. -- cheers
Me, --- simple and delicious!!! -- Dinner with friends -- they doing the lamb and potatoes -- Me the starters - veggies - pigs in blankets --
We cheat on the dessert -- shop bought -- I don;t have any!!!
Then for big meal around 4pm with friends:---
Starter------ Prawns in a Marie Rose Sauce (spicy, picante sauce) (mayo/tomato ketchup/Worcestershire sauce/Tabasco sauce/brandy) with shredded lettuce; Simple Bruschetta:
Then for main------- It has to be Roast Lamb, pure, with Roast Potatoes, a side of Roast Sweet Potatoes, Parsnips and Carrots with Maple syrup and thyme;
UK style Pigs in Blankets, Sprouts with butter through them, with homemade wine Gravy and Homemade fresh Mint sauce;
A good bottle (or three of a good deep red and quality dry white wine);
Postre ------ Apple pie with whatever for the rest - me nought;
Later!!! - It's a mystery but Cheese and Port will figure somewhere;

I am doing Prime Rib with my son and gf for Christmas Eve, always his choice. Salad and baked or 2x baked potato or pasta (he loves fettuccine alfredo), don't know on that yet. It's just us. We open presents. Snacks will be my chipped beef ball during the day, cheese/crackers, pimento stuffed celery (my son loves that); and, shrimp.
Christmas Eve is his choice.
Christmas Day is just me, I go for a long beach walk, relax; and, I do go to a friends open house ... but, just a few snacks and drinks. I'm going to heat up ham in the freezer; make spud salad, and baked beans.
Christmas Day is usually fairly classic.
I don't rarely do anything different.
Now, I do have a Christmas Dinner with my Poker Buddies ... then, we try different things.
But, I like to keep it simple, and eat the things I grew up with for the holidays. Just my tradition.

Two ways to cook. High temp, then, reduce to 325 to finish. Or; a long a slow roast which makes it very very pink and moist.
Both work so well. And, HAVE a thermometer. Make sure you calibrate your oven before you cook this. Middle rack; and; check the temp. Then, let it rest a good 20-30 minutes tented before serving. Don't forget, take it out early enough; because it will continue to cook.
I think the slow roasted always works best.
Two tips ... I add a can of beef broth to the pan; and, set the roast on a rack. This just makes sure you will have plenty of drippings. I often add a little diced onion to the bottom too. That with the drippings from the roast will make a delicious au jus for the meat.
I also serve a creamy horseradish dip on the side.

Just pick a good full proof recipe; and, read all the comments. And, plan how you want to serve it. It is expensive; but, basically it cooks itself; and very easy.
