"Chefy" Tip of the Day - 11/17

Post by Kchurchill5 » Tue Nov 17, 2015 8:22 am

Here's a few other quick tips ...

Try cooking your pasta in white wine or red wine. Now, pre cook the pasta about half way. In the mean time; add a little garlic, red pepper flakes, and olive oil to a small pot. Just saute until tender. Add the wine and cook just a minute. By then, the pasta is done. Drain the pasta, reserve a little water; and add the wine to the pasta. Let it finish cooking.

You can do this with white or red.

Cook your potatoes - for mashed potatoes; cut in cubes, and in milk and broth in a shallow pan. Then, use the starchy liquid to thicken the potatoes. You can even add fresh thyme or other herb sprigs, bay leaves, garlic, etc. It makes killer mashed potatoes.

Make sure to use broth to cook rice, couscous, grains, etc. And even a mix of coconut milk and broth for delicious coconut rice.

Quick cooking brown or white rice is also delicious cooked in a apple cider too. Couscous as well. Simply heat some herbs, a little shallot and apple cider in a big pot. Then, add the rice or couscous. Cook according to package directions.

You can also add whole smashed garlic gloves; small bundles of fresh herbs, thin strips of lemon or orange as you cook rice or grains. Adds tons of flavor; and, easy.
You can even add a little white or red wine as you cook your rice; for additional flavor.
