Good day! :) It's still morning here. Another gorgeous sunrise. Blue skies! It's a nice change. Can't wait to get outside. I had a good call with Bea and I'm looking forward to what we'll be able to 'cook up'. :)

Greens: I buy the 1kg bag of spinach and when I can't use it all, I freeze the rest before it expires. Put it in everything i can think of; smoothies, sandwiches, salads, stir-fry, pasta, omelettes, ...

It is grey and damp here, around 50F with rain on the way. We'd had a few days of sun but that's gone now. Good days to cook up soups and chili. I made split pea soup yesterday in the Instant Pot.

I do the same with spinach, it freezes well..

Send some of that pea soup my way, it is cold and wet here… We had -43 Celsius last week and today was +2 🙃

The rain has almost moved on. Very mild here for February today, current morning temp is 62F. I wish there was some sunshine to go with it.
Yesterday's cooking was Szechuan Eggplant which was yum. And leftovers of some cabbage rolls.
Today will be sub sandwiches and chicken legs (recipe not decided yet).
Trying to hold off baking since I am getting two product shipments on Saturday for baked goods to use in a blogging event. Then I will be trying my hand at some peppercorn cookies, cherry bakewell tarts and mango kulfi. And I need to make something in a square pan as I was sent one. Not baked, but will be making some mint julep iced tea, which will be fun.
Other things upcoming are Irish egg rolls, Greek shrimp turnovers, toasted ravioli, and a real oldie: tomato aspic to celebrate Amelia Earhart for national women's month. I've never had aspic. Should be interesting.
Always busy in the kitchen here.

It's been a busy morning here so far. Had some good meat sauce last night. I screwed up the ravioli though, wasn't paying attention & they cooked the insides out. Whups!
