i like mine plain, hubby likes a bit of hot sauce, shredded cheddar (only) on it, with a side of cornbread (and I make that with green chilies in it)
I like mine thick too! Canned tomatoes, canned tomato juice, masa, onions, garlic, cumin, oregano, chilis, jalepeno, ancho chili powder, some cilantro, lime juice, ground beef, and chili beans!!! Today I added a can of garbonzos I had left over in the refrigerator. Mmmm...a shot of tequila too! And one for me as well!!!! :D

I almost forgot I use 95% lean ground beef. I don't like a lot of fat swimming on top of mine.

I have never tried cilantro in chili! I need to think about this. You garnish with it right?

FL and I make chili year round. I love it. During the summer, a bowl of chili cold brews and a cold ceviche to start. NO problem with chili when it's hot. We often have it after a day on water fishing. Great easy food.

Favorites, I have 4
My regular beef chili
White Bean chili
Black Bean
and
Shrimp and chorizo

I love them all.
Do I try others, yes, and I will eat others. But for me, I only make my 4.

I hate chili without lots of beans; hate chili with beef chunks or cubes, I like ground beef; hate chili without vegetables. But that is just how I grew up.

Spice ... HOT baby. It better be spicy. Now when I make it for a crowd, I do go easy but add sauce for people to add. I want heat.

On the side, a piece of good cornbread or tortilla chips.
And for a garnish, must have cheese (monterey jack), scallions and sour cream. Olives are also nice.

I will post all 3 on Zazz. My white chili is one of my favorites.

Mine has ground beef, onions, garlic, celery, jalapenos or other peppers, lots of seasoning, and lots of beans (light and dark red kidney), V-8, diced tomatoes and beer. Thick, but still thin enough. Topped with cheese, sour cream scallions and tortilla chips.

Cilantro and different chilies for different chili recipes.

Roll up a flour tortilla with a mix of green chilies and a mix of cheese. Put on a plate. Top with chili and microwave. Top with sour cream and avocado.

I have done that before for a quick lunch. Easy and delish and comes out perfect.
