I like to change it up a bit; but, basically I follow the recipe. It is really good.
I like to add some red onion, scallions, and arugula.

But, you get the idea; it is a really basic recipe, and simply dressed. It's really delicious. Another good way to use beans.

These are a few I make often ... I tend to change them up a bit; but, basically use the general recipe. They are all a bit different; and, nice to make as a side dish.

I had no idea there were still so many posts on this! thanks everyone. I actually used the beans in 2 different soups. Minestrone and another which was just the beans and spicy chicken sausage. thanks again for all of the suggestions!
