I have always liked whole wheat bread and pastas, and whole grain products. The last few years, it doesn't like me anymore. It gives me really bad gas

and It just hurts my tummy to eat whole wheat and grain products.

Is that the same thing or not? I usually avoid most whole wheat/grain products and then I'm ok.

It is possible you are gluten intolerant, especially if it only happens when you eat wheat, rye or barley. It's a simple blood test to find out. The Dr. recommended that I eat gluten in more than one meal every day for at least six weeks before getting tested to get an accurate reading.
If you suspect you have celiac disease or a gluten intolerance you should get tested because exposure to gluten increases the risk of intestinal cancer. Gluten must also be avoided in order to limit the risk of malnutrition, anemia, osteoporosis, neurological effects, alopecia (hair loss), skin rashes, and thyroid problems.

Intestinal cancer. Really!

My dad died of colon cancer.

I have not really studied any information about gluten or celtic so I am not well informed about the the two disorders at all. So a simple blood test will determine if one is gluten intolerant--interesting. Lord help me if I am glutenized! I can gain weight just smelling bread bake.

The only products I buy gluten free are pasta and bread. I don't buy any of that other stuff. I do buy Udi's bread and don't love it, but I made my own bread and thought the texture was crumbly. I need to just try a different recipe. I made sourdough pizza crust last night. I froze it for later use, but can't wait to see how it turns out. I did try a Kinnikinnick hamburger bun last night and it was the best GF bun I have had. Tasted like a real burger!

I will have to keep an eye out for that brand. So far the best one I have tried is Udi's. The flavour is just okay, but at least it holds together when you bite into it, lol.
I tried many many recipe for homemade bread and decided to experiment and come up with one of my own. It took forever for me to find a combo of flours and starches that work well together to turn into a nice airy loaf that doesn't fall apart when you bite into it and also tastes good.
Now I'm working on buns. I'm having a heck of a time finding molds to cook them in.

Do you think it would stay inside of ring molds or is the dough more of a batter and too runny?

The dough is like a thick muffin batter, it would seep through when it rises.
