This was dinner last night. Very easy, light and healthy.
Baked Tilapia in a foil pouch over a bed a spinach with fresh veggies. A simple broth and served with a spoon of scallion rice on the side. No clean up ... Love it!

I will post the recipe, hopefully today. It is very easy

NO oil, NO breading, I did use 1 teaspoon butter and a tablespoon of wine; but it makes the sauce for the spinach, veggies and fish. You could even leave the wine out too.
And no clean up. I had one of those microwave bags of white rice ... 90 seconds and it was done. Added scallions and presto. NO dishes. Got to love that.
The tutorial I thought would be helpful for those who never cooked fish in pouches. I usually do mine on the grill, but I had just cleaned mine, so it was soaking wet; I opted for the oven last night.
