I used maple wood chips for this as I didn't want the fish to be black. The alder chips I use for smoking roast pork blackens the outside of the meat. The maple doesn't do that ;)

That salmon looks so good! I have used a combo of maple and alder without it turning the fish black. Alder is the traditional wood to smoke salmon with.

I know the photo is not the best, I still had steaks and burgers cooking on the grill and had to get back outside ( if I did nit take the photo when I did the chops would have been devoured by my wife befor I snapped the pic).

We have a sitting are with a gazebo that we love, we added a mini deck with a bbq gazebo so those manning the grill could be comfortable rain or shine.
Have a little cornor of the garage set up with a electric cooler for drinks and such as well as a coffee station, have shelves set aside for the bbq 'stuff' We plan on expanding the oudoor area next season.
