Menu Planning for the Week of April 14th thru April 20th
I don't really have a menu this week, as I didn't last week. Between my foot, 2 major dental problems over the last 2 weeks and workers in and out of my house for the past week ... I can barely find my kitchen.

SAT - FRI ...
No idea. I have fish, shrimp and pork all in the freezer. I also have plenty of veggies, salad ingredients, rice and pantry items, so ... these are some ideas. for this week.
- Wrap sandwich with shrimp (already cooked in the freezer); spud salad
- Grilled catfish or Tilapia, sweet potato fries
- Tomato soup (freezer); Italian sub sandwich
- Grilled lemon honey or chipotle chicken; coconut rice; lima beans
- Leftover chicken, maybe added to the coconut rice with some veggies for a quick dish; or a Mexican quesadilla
- Also have spaghetti and meatball
- Salmon, potatoes
- stuffed potatoes with Italian beef, chees and a side of broccoli

Breakfast, as usual: cottage cheese, yogurt and fruit
Lunch, leftovers
and ... don't forget to clean out those pantries, fridge and freezer!

Tonight might be some leftoverHam, Bean & Vegetable Soup - whatever doesn't get eaten tonight will be lunch tomorrow and some will get frozen.
I am planning the following rough meals:
Steak with a side veg (either asparagus, broccoli, salad, or mashed cauliflower)
Sausage w/sauerkraut
Steak Tips w/whichever veggies I didn't already eat on the steak night
Boiled or roasted Shrimp w/whichever veggies are left
Either Quiche or an omelet night, using up stray meats/veggies/cheese
Leftovers or soup + salad for the rest
Not planning to eat out this week - really can't afford it, might bake bread and/or cookies for my dd if she requests
Didn't buy any meats - all of the above are already in my freezer/fridge.

I just now put together my menu for the week. Although its a bit more "red meat" than usual, its fine for a change.
Saturday we ate salads , lighter meal as we went out to brekkie and pigged out!
Sunday ~ Chinese Takeout.
Monday ~ No Meatless monday this week. I am making Taco's for Hubby and I will have a lightened version of Taco Salad, sooo Yummy! Will also make some Black Beans/Corn/Cilantro
Tuesday ~ Crockpot: Roast Beef, Potatoes and Carrots
Wednesday ~ Eggs scrambled with Sweet Peppers, Toast and Potatoes for Hubby
Thursday ~ Roast Beef Sammies. Simple, but tasty.
Friday ~ Broiled Cod served with a Salad. Maybe make some edamame to go with, or Lima Beans.
Made Hubby some Peanut Butter Cookies this weekend. As far as cookies go, those are his fav. This coming week may make some No Bakes (my fav cookie) or, Chocolate Chip Cookies and then for the Boys will make some Pumpkin Cookies.
As always, Brekkies here during the week for me are High HIGH protein and then some fruits for lunches. Got to get those carbs in early to burn off throughout the day. Also, I saw that you are low carbing, remember, that if you take in lean amounts of high proteins you can have complex carbs to go with, it actually kick starts your metabolism to BURN!

Sunday - Baked Chicken Chimichangas, refried beans, tortilla chips
Monday - Oven Fish and Chips
Tuesday - stuck at work for parent night; soup potluck
Wednesday - Fiesta Ranch Burgers & Sweet Potato Fries
Thursday - ??? Taste of Home Cooking School with my mom <3
Lunch - leftovers, fruit
Breakfast - oatmeal or Egg beaters and fruit or cottage cheese

Interesting about the lean protein + carbs - I didn't really know that! All of the meat I eat is lean except for bacon and sometimes breakfast sausage. Most of the sausage I buy is the lean type (made from chicken or turkey usually), so even on that typically is lean around here. So because of that I can eat some carbs with it?? OMG yay!!!!!

I am sure stress is a contributing factor for me - I really don't eat all that much normally anyway. That is partly why I was surprised at how hard it has been to lose this divorce weight. The low carbs thing is working though at least. Pretty boring for me menu wise lately though - not much experimentation yet.MaMere wrote:heck ya Heather, that is the best way to eat carbs, is with a protein! trust me, I understand Heather. Take your time, and remind yourself, the weight will come off, slow and steady is key for sure. I think when there has been weight gain because of stress, that exercise plays a huge roll in taking it off, as that is what helps the metabolism come back into a "normal range". Without a strong functioning metabolism the calorie count, or where their from, doesn't even matter.
These are just my opinions of course, but having gone through some horribly stressful years, I can tell you the proteins, and exercise, has been what has turned it around for me.

But exercise is really key. I have found simple things like parking in the back of a parking lot, taking stairs instead of the elevator, etc. Obviously with my foot I can't do that know, but just simple things can really make a difference. I love my tread climber because I can do it any time which works with my schedule. I don't go to a gym or classes, but I try to take 15-20 minutes a day to do stretching and some free weights - usually in the am. That for me really kick starts your body starting to burn calories.

Interval training is biggy too, that I have gotten away from, need to start back up. 5 minutes of aerobic followed by 5 of free weights is awesome!
